Should you peel carrots before eating or cooking them?

Carrot peels are completely edible and full of fiber, vitamins, and antioxidants. If you prefer a firmer texture and want to keep the nutrients, just scrub them clean and skip the peeler.

However, peeling is fine if the carrots are old, dry, or you prefer a smoother texture. Use a veggie peeler and remove only the outer layer to retain nutrients.

Bottom line: peeled or not, carrots are a healthy, crunchy snack.
