- 4 Russet potatoes

- Salt & pepper to taste

- Prep potatoes: Scrub clean, dry, and score thin cuts across the top (don’t slice all the way through).
- Mix seasoning: Combine oil, garlic, herbs, salt, and pepper.

- Bake: Roast for 45–50 minutes, brushing again halfway through. Potatoes should be crispy outside, soft inside.
