Ingredients
- 4 firm green tomatoes
- 2 eggs
- ½ cup milk
- 1 cup all-purpose flour
- ½ cup cornmeal
- ½ cup plain bread crumbs
- 2 tsp kosher salt
- ¼ tsp black pepper
- ~1 quart vegetable oil (for frying)
Quick Instructions
- Slice Tomatoes: Cut into ½-inch rounds. Discard ends.
- Prepare Breading Stations:
- Flour in one dish
- Egg + milk in another
- Cornmeal + breadcrumbs + salt + pepper in a third
- Bread Each Slice: Dredge in flour → dip in egg wash → coat with crumb mixture.
- Heat Oil: In a skillet, heat ½-inch oil to 350–375°F.
- Fry in Batches: 2–3 min per side until golden and crispy.
- Drain: Transfer to paper towels. Rest a few minutes before serving.
